
Today I made a tofu cheesecake. :) I kind of frankenstein-ed the recipe in the end, so here's hoping it'll actually set and turn out well. Oh joy.
Tofu Cheesecake (adapted from Kitchen M)
(I used a basic digestive biscuit no-bake base cos I'm lazy and bare bones like that)
For cheesecake filling
300g Silken Tofu
250g (1 pkg) Cream Cheese
3 Tbsp Butter
1/4 cup Brown Sugar
1/8 cup Lemon Juice
1/2 cup Greek yogurt
2 Tbsp + 2 tsp Gelatin Powder
1/2 cup hot water
In a food processor, add the tofu, cream cheese, and butter and process until no lumps can be seen. Add sugar and process again until very smooth. Dump in the lemon juice and greek yogurt and process again.
In a small bowl, mix the gelatin powder and hot water until it's alllll melted and strain into cheesecake mixture.
Pour the cheesecake mixture into the pan with the lazy-bunny-digestive-biscuit base. Cover with plastic wrap and put it in the fridge for at least 4 hours. Serve chilled.I screwed up, I must admit. I read the recipe wrongly and used only 2 tsp of gelatin powder and freaked the crap out after my cheesecake had been dumped in the fridge for about 1.5 hours? So I decided to go all oh-fuck-it and poured out the mixture and added more gelatin mix. HERE'S HOPING IT SETS PROPERLY. If it doesn't, I'll go to SKP and buy those... tiny little plastic individual portion cups and spoon out the cheesecake mixture and go all ~it's a tofu cheese cake to be drunk~ LOL.
